Almond Apricot Granola Bars

These sweet granola bars are great as a snack with an energy boost!
3 cups Superior Selections Low Fat Granola Cereal
2/3 cups diced Superior Selections Dried Apricots
½ cup Best Choice Slivered Almonds
1 tbsp Best Choice Butter
2/3 cup Superior Selections Orange Blossom Honey
½ tsp cinnamon
Line an 8×8 square pan with aluminum foil, then spray with cooking spray.
In a large bowl, mix granola cereal, apricots and almonds together. Set aside.
Place butter, honey and cinnamon in a large pot over medium-high heat. Stir ingredients together until they come to a boil; allow mixture to boil for a few minutes. Continue stirring until the mixture becomes slightly thickened.
Remove pot from heat and pour in granola mixture; stir until well coated.
Spread granola mixture in pan and press down firmly. It will be sticky so use a greased spatula or waxed paper to help push mixture down into pan.
Cool granola for at least 30 minutes in refrigerator. Once granola is hardened, remove from fridge and cut into bars. Store bars in air-tight container in refrigerator or cool place.
