Almond Butter Banana Bread

We teamed up Clearly Organic to bring you this light and delicious banana bread recipe. National Banana Bread Day is February 23, so make a batch for your friends, family and co-workers, or just enjoy a loaf yourself.

 

Ingredients:

3 large bananas

¾ cup sugar

¾ cup applesauce (we used unsweetened, but cinnamon will give your bread an extra boost of sweetness!)

2 eggs

2 cups flour

1/3 cup smooth almond butter

1 tbsp vanilla

1 tsp baking soda

½ tsp baking powder

½ tsp salt

¼ tsp cinnamon

 

Directions:

Preheat oven to 325 degrees. Mash bananas in a large bowl thoroughly. Stir in sugar, applesauce and eggs. Add in remaining ingredients and mix together.

 

Grease one loaf pan (or three mini loaf pans like we did). Pour mixture into loaf pans. Bake 50-60 minutes. Test bread by poking toothpick in the center of the loaf – if it comes out clean, the bread is ready to be taken out of the oven).

 

Let cool 10 minutes before serving.
