Bright Rice Salad

This beautiful salad is nutritious and refreshing. Perfect for BBQs get-togethers this spring!
1 tbsp olive oil
1 ½ tbsp Superior Selections Balsamic Vinegar
1 tsp salt
¼ tsp black pepper
¼ tsp Superior Selections Honey Dijon Mustard
Rice Salad Ingredients:
2 cups Superior Selections Brown & Wild California Rice, cooked and cooled
1 yellow bell pepper
½ medium white onion
4 stalks celery
8 ounces cherry tomatoes
¼ cup chopped fresh cilantro
Cook rice according to package. Once prepared, let rice cool completely. (This recipe is best served chilled or at room temperature)
In a small bowl, add all dressing ingredients and whisk together. Set aside in refrigerator.
Chop bell pepper, onion, celery and cilantro. Cut cherry tomatoes into quarters. Once rice has cooled toss these veggies in with the rice. Add dressing and continue to toss until well combined.
