Cherry Chocolate Rice Pudding

This creamy dessert is easy to whip up and feeds up to eight! It deliciously combines the flavors of white chocolate, sweet dried cherries, cinnamon and more. The proof is in the pudding 😉
3 ½ cups milk, separated (we used Best Choice Lactose Free, but use whatever kind you prefer)
1/3 cup Superior Selections Dried Cherries
2 tablespoons Best Choice Packed Light Brown Sugar
1 tablespoon Best Choice Butter
¼ teaspoon Best Choice Cinnamon
Pinch of salt
1 cup Superior Selections Jasmine Rice
1 box white chocolate instant pudding
Cinnamon sticks for garnish (optional)
In a medium saucepan, stir together 1 ½ cups milk, dried cherries, brown sugar, butter, cinnamon and salt. Turn burner to medium and heat ingredients until boiling.
Once boiling, add in rice and stir. Reduce heat to low to simmer for 18-20 minutes or until rice is cooked. Stir occasionally.
While rice is cooking, make pudding according to package with the remainder of the milk.
Once rice if completed, remove saucepan from heat and stir in pudding. Serve warm with cinnamon sticks.
