Confetti Shrimp Rice

This recipe combines sweet and savory flavors for a complete meal in just 30 minutes. Perfect for weeknight dinners.

Confetti Shrimp Rice

1 cup Superior Selections Jasmine Rice
1/3 cup natural sliced almonds
1/3 cup Superior Selections Dried Cranberries
1 ½ cups water
¼ cup sliced green onions
1 tablespoon grated lemon zest
20 peeled, cooked shrimp
¼ cup Sweet Thai Chili Sauce

Rinse rice until clean. Pour rice and water in saucepan and bring to a boil over medium-high heat. Reduce heat, cover and simmer for 18-20 minutes.

While rice is cooking, place shrimp and Sweet Thai Chili Sauce in pan and cook over low heat. Stir shrimp so all sides are covered in sauce.

Once rice is cooked and liquid in saucepan is gone, remove from heat. Stir in almonds, dried cranberries, green onions and lemon zest until blended. Spoon rice into bowls topping with shrimp. Serves four.
