Healthy Cherry Chocolate Oatmeal Muffins

There’s no shortage of sweets around the holidays! These Cherry Chocolate Oatmeal Muffins are no exception, but a few swaps make these tasty treats a bit healthier for you. Enjoy the recipe below.

 

Ingredients:

2 cups old fashioned oats, divided

3 large overripe bananas (about one cup mashed)

2 eggs

1/3 cup Superior Selections Honey

¾ cup milk

2 tsp vanilla extract

2 tsp baking powder

½ tsp baking soda

½ tsp salt

3 ½ tbsp cocoa powder

1 cup chocolate chips, divided

1 cup Superior Selections Dried Cherries

 

Directions:

Preheat oven to 350 degrees. Place muffin liners in muffin pan. Set aside.

In a food processor or blender, blend 1 ½ cups of oats until they reach flour-like consistency.

In a large bowl, mash bananas. Slightly beat eggs and add them to the bananas along with honey, milk and vanilla; mix until smooth. Add oats, baking powder, baking soda, salt and cocoa powder to banana mixture. Mix until combined.

Fold in ½ cup chocolate chips and all of the cherries. Pour completed mixture into muffin cups until almost full (about 14-16 muffins). Top muffin mixture with remainder of the chocolate chips and oats before baking.

Bake about 21-23 minutes or until a toothpick inserted into the center of a muffin comes out clean.
