Honey Balsamic Chicken

1 tbsp butter
2-4 boneless, skinless chicken breasts (around 4 oz each)
¼ tsp salt
1/8 tsp ground pepper
1 clove garlic, finely chopped
2 tbsp Superior Selections Balsamic Vinegar
2 tsp Superior Selections Dijon Mustard
2 tsp Superior Selections Orange Blossom Honey
1 cup Superior Selections Basmati Jasmine Rice
Cook rice according to package instructions.
While rice is cooking, place butter in a large non-stick skillet over medium heat. Season chicken with salt and pepper. Add chicken to skillet once butter is foaming and cook completely through, turning once. Reduce heat to low.
Place garlic, balsamic vinegar, mustard and honey in small bowl, and stir until combined. Pour mixture over chicken in pan; cook until sauce starts to thicken. Remove chicken from heat. Plate with rice and spoon sauce on top. Garnish with greens (optional).
