Mediterranean Pasta Salad with Red Wine Vinaigrette

It’s picnic and cookout season, and what’s a great outdoor meal without a tasty pasta salad as a side?! This Greek take makes for a delightful dish.
2 ½ cups uncooked pasta (we used penne, but pick your favorite!)
½ medium red onion, diced
10 cherry tomatoes, sliced in half
1 cup diced cucumber
½ cup sliced black olives
½ medium yellow bell pepper, diced
1 cup crumbled feta cheese
1/3 cup red wine vinegar
2 tsp. lemon juice
1 ½ tsp. minced garlic
1 tsp. sugar
2 tsp. oregano
½ cup extra-virgin olive oil
Cook pasta according to package. Strain and add to a large bowl to cool. While pasta cools, slice all veggies and make vinaigrette by whisking together all dressing ingredients, except for the olive oil in small bowl. Slowly stream in olive oil while continuing to whisk.
Mix sliced veggies and feta into the bowl with pasta. Pour dressing over the pasta and toss to combine. Cover with lid or plastic wrap and refrigerate for a few hours before serving. Serve cold.
