Food is so much more fun to eat when it’s colorful! This nutritious salad is perfect during the summer when berries and peaches are in season. Or make it all year long with frozen fruit like we did in this recipe with the help of Best Choice.

Serves 2

Ingredients:
4 oz Whole Wheat Spaghetti
3 cups leafy greens of your choice
1 tomato, sliced
2 cups Best Choice Frozen Sliced Peaches
1 cup Best Choice Frozen Berry Medley
1 radish, sliced
½ cup Best Choice corn
½ cup Superior Selections Macadamia Nuts
½ cup Superior Selections Feta Cheese
1 tbsp Superior Selections Balsamic Vinegar
1 tbsp Superior Selections Orange Blossom Honey
1 tbsp extra-virgin olive oil

 

Directions:
Cook pasta according to package instructions. Toss pasta and leafy greens together in a large bowl. Divide between two plates. Top with tomato, peaches, berries, radish, corn nuts and cheese.

In a small bowl, whisk together vinegar, honey and olive oil to make dressing. Drizzle over salad and serve.
