Salsa Chicken Bake

This easy dish is perfect for weeknight dinners! We teamed up with our friends at Best Choice & Clearly Organic to make this recipe truly tasty! You control how spicy you want it by the salsa you choose.
2/3 cup Best Choice All Purpose Baking Mix
2 tbsp water
¼ cup Best Choice Original Liquid Eggs
1 ½ cups shredded cheddar cheese
2 (10oz) cans Best Choice Premium Breast of Chicken, drained
1 ¼ cups Clearly Organic Hot Salsa (we used hot, but use your preference!)
1 container Superior Selections Jalapeno Stuffed Olives
Optional toppings: sour cream, avocado, chives, tomatoes
Heat oven to 400 degrees F. Spray 8×8 pan liberally with cooking spray. In medium bowl, stir baking mix, water and liquid eggs together. Spread mixture into pan. Sprinkle ¼ cup of the cheese on top of mixture.
In a large skillet over medium heat, warm chicken. Stir in salsa and heat until ingredients are hot and well combined (about 3-4 minutes). Add salsa chicken to the pan up to ½ inch from the edges. Sprinkle remaining 1¼ cups of cheese over all ingredients evenly.
Bake 18-22 minutes or until the edges are golden brown and cheese is completely melted. Loosen from sides of pan and let cool for a few minutes. Then cut into squares. Serve topped with sliced jalapeno olives and other ingredients as desired.
