Shrimp Gumbo Dip

This delicious dip is perfect for a Fat Tuesday or Mardi Gras celebration! Thanks to Best Choice for teaming up with us.

 

Ingredients:

¼ cup Best Choice Butter

6 green onions, sliced

2 celery stalks, sliced

1 cup chopped sweet peppers (we used red and orange to add some color!)

½ tsp minced garlic

1 tsp Creole season (or more depending on taste)

1 (8oz) package Best Choice Cream Cheese

10 oz Best Choice Precooked Shrimp, peeled and sliced

¾ cup Best Choice Pickled Okra, sliced

½ cup Superior Selections Parmesan Cheese, grated

2 extra tbsp. Superior Selections Parmesan Cheese, (grated to top the dip)

Your favorite Superior Selections crackers or thick tortilla/pita chips

 

Directions:

Preheat oven to 400 degrees. In a large pot, melt butter over medium heat. Slice green onions, celery stalks and bell peppers; add to the pot. Stir and cook until peppers are tender, about 5 minutes. Add garlic and seasoning, stir and cook for an additional 2 minutes. Turn heat down to low and add cream cheese. Stir until cheese is melted.

Remove pot from heat and stir in sliced okra, ½ cup Parmesan cheese and prepared shrimp. Once well combined, add mixture to a square baking pan or 2-quart baking dish. Sprinkle the remaining 2 tbsp. Parmesan cheese on top and bake for 15-20 minutes, or until cheese is bubbly and starting to brown.

Serve warm with a variety of thick crackers. Enjoy!
