This cheesy appetizer recipe is sooo gooey and delicious!
25 fresh white mushrooms
1 tbsp olive oil
1/3 cup chopped onion
1 clove garlic, minced
8 oz cream cheese, softened
½ cup shredded mozzarella cheese
½ cup shredded Parmesan (or Asiago) cheese
1 tbsp grated Parmesan cheese
2 tbsp minced parsley
2 tbsp panko breadcrumbs
2 tbsp butter
Salt and pepper to taste
Preheat oven to 375 degrees. Line a baking sheet with foil and spray lightly with non-stick cooking spray.
Remove stems from the mushroom caps; finely chop them and set aside.
Place the mushroom caps on the prepared baking sheet. Sprinkle the inside of the caps with salt and pepper.
Pour olive oil in pan over medium-high heat. Add mushroom stems and chopped onion to pan and cook for about 4 minutes. Add the minced garlic and cook for one more minute.
In a large bowl, stir cream cheese and shredded cheeses together. Mix in parsley and cooked mushroom mixture until completely combined. Fill each mushroom cap with a tablespoon or more of the cheese mixture, until it is all used.
In a small bowl, mix breadcrumbs and grated Parmesan cheese. Sprinkle the mixture on top of each filled mushroom cap. Melt butter and pour over mushrooms.
Bake for 20-25 minutes, until mushrooms are golden brown. Watch them disappear!
